With all of my hobbies, spare time is sometimes short on hand. Translation: while I love cooking, I hate being cooped up in the kitchen for hours on end. Unless it’s a holiday or special get together, I just won’t do it. Enter my crockpot.
About two years ago (or maybe three, I can’t really remember; all I know is, I’ve got a lot of mileage on the little guy), my parents gave me a Cuisinart 3.5 quart slow cooker. It completely revolutionized my cooking endeavors. If you don’t have one, go out and buy one immediately. Or you could always wait until a birthday or Christmas, that works too.
Long story short: If you’re all about quick, easy recipes with minimal ingredients, read on.
Without further delay, the awesomeness that is this recipe:
- 2 pounds chicken breast
- 3-4 tbsp. all purpose flour
- 2 jars Patak’s Original Simmer Sauce in Tikka Masala Curry
- 2 or 3 packages of Uncle Ben’s Ready Rice (I used Basmati, but Jasmine works too)
- Naan bread (optional)
Step 1: Chop up chicken breast into 1″ to 1 1/2″ cubes. Place in medium bowl and pour flour over top. Coat chicken with flour
Step 2: Place chicken into crockpot. Add both jars of Tikka Masala Sauce. Stir to coat chicken cubes. Cook on low for 6 hours
Step 3: Just before serving, cook however many packages of rice you purchased according to directions
Step 4: Serve Chicken Tikka Masala over hot rice with warm Naan on the side
How hard was that, honestly? It’s four ingredients and four steps! And when you get home after work, your whole house smells amazing!
Keep in mind that this recipe is perfect for a 3 to 4 quart slow cooker. Adjust as necessary if your crockpot is larger or smaller (times will need to be reassessed as well so consult your manual for specific times and temperatures). You could also use lamb, beef or other cuts of chicken. Just make sure you adjust crockpot cook times.
